Crosskeys Vineyard Winemaker's Dinner
Enjoy a multiple course menu served with complimentary wine pairings from partner winery CrossKeys Vineyard. The Mimslyn Chef, Chris Harris, personally selected each vintage to be paired with his tasting menu. Thoughtful flavors are developed with each wine course.
4-Course Menu:
- Candy Smoked Salmon - House Smoked Candy Salmon with Apple Butter Cream Cheese on a Peppered Cracker
- Virginia Ham Ravioli - Virginia Salt Ham, Roasted Mirepoix, Mascarpone, Creamy Mornay Sauce, Parmesan and Butter Sauteed Sweet Peas, Fried Pork Rind. Served with Fiore - off-dry rose.
- Sorbet
- Braised Short Rib - Anise Braised Short Rib, Rosemary, and Havarti Sweet Potato Gratian, Sauteed Kale with Charred Red Onion in Braising Jus. Served with Merlot.
- Dessert - Custard Baked Apple Gratian, Apple Chips, Apple Butter Ice Cream and Bourbon Caramel. Served with Chardonnay.
